Four Soup Recipes for Shabbat | Cook Soup with Me | Orthodox Jewish Mom (Jar of Fireflies)

Its cold and dreary outside so let's make soup! In this video I make four different kinds of soup: Tomato and Rice Soup, Back of the Fridge Soup, Autumn carrot and sweet potato Soup, and Potato and Leek Soup. All these soups are easy to make and delicious to eat. So let's make soup together!

Autumn Carrot and Sweet Potato Soup

INGREDIENTS (as I used them)
dollop of Smart Balance
3 small yellow onions, chopped
1 tablespoon Hawaiij
1 pound carrots, peeled and chopped
1½ pounds sweet potatoes, peeled and chopped
8 cups veggie broth
1¾ teaspoons salt
1 tart yet sweet apple (such as Honeycrisp or Fuji), peeled and chopped
2 tablespoons honey
Ground black pepper

INSTRUCTIONS
In a large pot, melt the butter over medium heat. Add the onions and cook, stirring frequently, until soft and translucent, about 10 minutes. Do not brown. Add the curry powder and cook a minute more. Add the carrots, sweet potatoes, chicken broth and salt and bring to a boil. Cover and simmer over low heat until vegetables are very tender, about 25 minutes. Stir in the apples and honey. Using a stick blender, puree the soup until smooth and creamy. (Alternatively, cool the soup slightly, then puree in a blender in batches. Be sure to leave the hole in the lid open, and cover with a kitchen towel, to allow the steam to escape.) Season to taste with salt, pepper and more honey if necessary. Ladle soup into bowls and sprinkle with more curry powder if desired. (Note: As the soup sits, it will thicken up so you may need to add a bit of water to thin it out.)

TOMATO RICE SOUP

2 tbsp olive oil1 large onion, diced 128oz can crushed tomatoes3 cups of water½ cup basmati rice½ tsp salt

Heat the olive oil in a large soup pot. Add the onion and sauté for 78 minutes, until translucent
Reduce the heat to low, add the crushed tomatoes, water and salt. Turn heat to mediumhigh and bring to a boil. Add the rice and stir well. Reduce the heat to low again, cover and let simmer for about 1015 minutes or until the rice starts to soften (increase the time to 3035 minutes if using brown rice or until  the brown rice is tender). Take the pot off the heat and keep it covered for another 10 minutes or until the rice has cooked completely.

Potato Leek Soup

INGREDIENTS (as I used them)
dollop of Smart Balance
6 large leeks, white and light green parts only, roughly chopped
3 cloves garlic, peeled and smashed and chopped
2 pounds Yukon Gold potatoes, peeled and roughly chopped into ½inch pieces
7 cups vegetable broth
2 bay leaves
3 sprigs fresh thyme
1 teaspoon salt
¼ teaspoon ground black pepper
1 cup soy milk

INSTRUCTIONS
Melt the smart balance over medium heat in a large soup pot. Add the leeks and garlic and cook, stirring regularly, until soft and wilted, about 10 minutes. Adjust the heat as necessary so as not to brown.
Add the potatoes, broth, bay leaves, thyme, salt and pepper to pot and bring to a boil. Cover and turn the heat down to low. Simmer for 15 minutes, or until the potatoes are very soft.
Fish out the thyme sprig and bay leaves, then purée the soup with a handheld immersion blender until smooth. Add the soy milk and bring to a simmer. Taste and adjust seasoning with salt and pepper. If soup is too thin, simmer until thickened. If it's too thick, add water or stock to thin it out.
