Ingredients
2 Cups Fed Discard
1/2 C Oil
1 C Granulated Sugar
2 Eggs
1/2 C Sour Cream or Greek Yogurt
1/2 C Cocoa Powder
2 tsp Baking Powder
1/2 tsp Baking soda
1 tsp Salt
1 C Grated Zucchini
Instructions
1. In a large bowl, add discard, oil, and sugar and stir until combined. Then add eggs and sour cream and stir until combined.
2. In a small bowl, combine cocoa powder, baking powder, baking soda, and salt. Then add this mixture to the batter and stir until combined.
3. Preheat oven to 375 degrees. Grate 1 C zucchini, and wring out the zucchini using cheese cloth or your hands.Then add the zucchini to the batter. Now is the time to add nuts, chocolate chips, or dried fruit if you are adding that to your bread.
4. Line your muffin pan with liners. Oil your liners. Then add batter to your liners, filling them about 2/3 of the way.
5. Bake the muffins for 2025 minutes at 375 degrees. Or if you are making a loaf, bake for 1 hour.
