Fried Pork Sandwich / Indiana Pork Tenderloin Sandwich

This sandwich is an Indiana staple. I love an Indiana pork tenderloin sandwich!
THE COST $4.54
Ingredients:
boneless pork chop
kaiser bun
mayo
yellow mustard
red onion
pickles
10 saltine crackers
2 tbsp flour
1 egg
frying oil, I used vegetable
garlic powder
onion powder
paprika
cayenne pepper
salt
pepper

Directions: Heat oil in a dutch oven or fryer to 350 F, rinse the pork under cold water and pat dry, butterfly the pork, salt and pepper both sides of pork to your liking, using a kitchen hammer pound the pork to desired thickness, then using the tenderize the meat with the hammer.
On a plate pour 2 tbsp flour, onion powder, garlic powder, paprika, cayenne powder, salt and pepper will be to your taste. I used a about 4 dashes each of those seasonings. In a food processer or in a ziploc bag crush up 10 saltine crackers and 3 dashes of salt, pour on a separate plate. On a third plate scramble 1 egg.
Now dredge the pork into the flour mixture and completely coat the meat, shake off any excess flour. Next dip the meat in the egg and completely coat the meat again and finally stick the meat on the saltine plate and press the crushed crackers into the meat, making sure that it is completely covered.
Set the meat on a baking rack to rest for at least 10 minutes. After 10 minutes you can put the pork into the fryer, cook for 6 minutes or until golden brown. You might want to flip it half way through cooking.
Assemble the sandwich to your liking. I like mustard, mayo, thinly sliced red onion and some dill pickles, but you can do what you like. You can also add tomato and shredded lettuce. Make sure you toast your kaiser bun because the sandwich can get a little soggy if you don't . Enjoy!!!!!
