Fryin' It Up! ~ Simple Southern Fried Okra

Hey y'all!!

Today, I am sharing how I make my super simple fried okra! Fried okra is so delicious and quick to make, so it's no wonder it is a staple in my kitchen as well as kitchens all across the south! This recipe is also one that can be adapted in several different ways. You can go for a classic fried okra or you can add diced onions and potatoes to mix it up a bit. You can also change up the breading by using flour or cornmeal!

Ingredients:

Breading
SelfRising Cornmeal (you will need just enough to generously coat all of your okra)
Salt & Pepper
Any other seasoning you would like to add (Onion and garlic powder are excellent additions!)

Okra, sliced into small pieces (I used a quart bag of okra for this)
Vidalia onion, finely chopped (Optional Y'all know I love a Vidalia onion!!)
Oil (you will need enough oil to stand up to a 1/2 inch high in the pan)


1.) In a large mixing bowl, dump your okra, cornmeal, salt, pepper, and any other seasonings. Mix all of this together so the okra is generously coated in the breading. The breading will stick to the moisture of the sliced okra, so you won't need to add any other liquid to get it to stick!

2.) In a frying pan, add your oil. You will need enough oil so that it stands about 1/2 inch high in the pan. I used vegetable oil for this, but feel free to use whatever you prefer!

3.) To get the oil hot enough to fry, set the heat on the highest setting. Once it begins to bubble slightly, decrease the heat to a high to medium setting so the okra doesn't burn.
Note: A good way to test your oil is by throwing one piece of okra in the oil to see if it bubbles/fries. If there are no bubbles, your oil ain't hot enough yet!

4.) Once your oil has reached a high enough temperature, spoon the okra into the pan. You want to do small enough batches so that your okra doesn't overlap. This allows the okra to fry more quickly and evenly.

5.) Once the breading reaches a medium brown color, remove the okra from the pan and place it on a plate covered in paper towels. The towels will absorb the extra oil so your okra doesn't get soggy!

6.) Continue working in batches until all of your okra is fried! Now enjoy!! Let me tell you, you'll have to savor it while it lasts because you'll have people fighting over this okra!!
