材料

廋肉 250300克
腌制 姜水盐

蒜头 2粒
姜丝 适量

调味
姜水
生抽
胡椒粉
黑酱油
白糖
生粉+花雕酒

Ingredients (Diana Aw)
1. Lean pork 250300g. Cut thin slices and wash. Pat dry and mix with little salt and ginger water(2). Once pork has absorbed the water, add second time and mix again till pork absorbed the water. Add little tapioca flour and mix well. Lastly add little oil and mix well. Set aside
2. Ginger small piece. Pound and place in a bowl. Mix with water.
3. Ginger small piece. Cut thin slices then julienned. Wash with water and pat dry.
4. Garlic 2 cloves, cut slices

Seasoning
1. Dark soya sauce little
2. Light soya sauce little
3. Sugar little
4. Pepper little
5. Potato starch with hua tiao wine

Method
1. Heat wok with cold oil, add in ginger and slowly fry till golden brown. Drain and set aside
2. Remove some oil from the wok and add in garlic and stir fry till fragrant. Add in pork and sauté for a while. Then stir fry it till fragrant. Add dark soya sauce and stir fry till caramelised. Then add in ginger water and bring to boil. Cover and simmer for 1 min.
3. Add light soya sauce, sugar and pepper and mix well. Add half of the fried ginger and continue to simmer.
4. Add potato starch with hua tiao wine and mix well
5. Garnish with the fried ginger
6. Serve and enjoy!
