We often decide what to eat based on what we think, read, or hear rather than what our bodies truly need. That's because it's not so easy for us to understand our bodies and their needs. The good news is that optimizing our food choices can significantly improve our physical and mental wellbeing. And that's what "Glucose Revolution" is about.

In this interview, Andrés Preschel and I talk about how blood sugar or glucose affects all systems in our body, how I decided to write a book, the creative process behind it, and a little of my personal story.
