RECIPES:

The pizza crust has 5 ingredients: Psyllium husks, almond flour, Lupin flour, heavy whipping cream, and a single egg. Blend the egg in a bowl, then add 1 tbsp of almond flour, 1 tbsp of Lupin flour, and one tbsp of psyllium husks. Add 2 tbsp of heavy cream, and mix together. Place the mixture on a plate, or you can use round silicone baking mats, like I do, and then microwave for around 90 seconds. Peal the crust off the mats, and then start adding your pizza ingredients. Start with a light coating of pizza sauce, or any lower carb tomato sauce. Then add cheese, some kind of meat, and other items. In this case I used black olives, and some spinach. Often, I like to use green pepper slices. Then I coat it again with a layer of shredded cheese and put it in an oven preheated to around 450 degrees for 12 minutes. And voila, you have a nice little personal pizza that tastes just like… well pizza.

Making the ice cream is the very definition of simplicity – just 3 ingredients: heavy whipping cream, allulose, and around 2 tbsp of vanilla extract. I use 1 pint of the heavy whipping cream, 7 tbsp of allulose, which helps the ice cream to stay softer in your freezer. With other sweeteners it will freeze like a brick. Blend the three ingredients together in a fairly large bowl with a hand mixer for as long as it takes, usually around five minutes, and you have a low carb version of ice cream. Then put it in the freezer and take it out when you need it.
