Y’all, this is soooooo good..Roy and I were amazed at how good it is…But how can it not be, if you like tacos…You can make this your own by putting what you like in yours, but try this recipe first to see how you like it…you will be glad you did.
Tips
1 you can use salsa instead of fire roasted tomatoes
2 You can leave out the corn tortillas and use it as a dip with Tostitos
3 You can use Tostitos in it instead of corn tortillas

Recipe
1 lb ground beef
1 medium onion…1 cup
1 tablespoon garlic powder or 2 cloves garlic
1/4 cup + 1 teaspoon taco seasoning…recipe below for homemade
1/2 cup water
1 14.5 oz can fire roasted tomatoes Do not drain
1 10 oz can rotel tomatoes
1 15 oz can black beans…drained and rinsed
1 14 oz can southwestern corn
34 cups shredded cheese.. more or less, according to your taste
16 corn tortillas

Preheat oven 350 degrees
Cook ground beef and onion until done…drain..Add garlic, taco seasoning, water, tomatoes, rotel, corn and heat through…Line a 9x13 baking dish with 5 corn tortillas overlapping a little…spread 1/3 of mixture over tortillas, then cheese. Repeat until you have 3 layers…cover with aluminum foil and cook 3540 minutes…let sit 1015 minutes before serving

Tips
Garnish with diced fresh tomatoes, green onions, sour cream on side
May use salsa instead of fire roasted tomatoes…1 1/2 cups
You may leave out the corn tortillas and use it as a dip for Tostitos or you can substitute the Tostitos for the tortillas

Recipe for taco mix
1 tablespoon chili powder
1 1/2 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon oregano
1 teaspoons salt
Mix all together and store In airtight container…I triple this recipe…
