How to make sweet and delicious Mexican rice pudding. A perfect treat for the Winter months.

Ingredients:
1 1/3 Cups White Rice (200g)
3 Cups Water (720ml)
4 Cups Milk or Milk Substitute (1 Litre)
3 Cinnamon Sticks
3/4 Cup Sugar (144g)
1 Cup Raisins (160g)
Directions:
1. Place the rice in a pot and rinse with cool water, then drain. Fill with enough water to cover the rice, about 3 cups. Bring to a boil over medium heat, then cook for 5 more minutes. Carefully drain the water.
2. Add the milk, cinnamon, and sugar. Stir to combine. Bring to a boil over mediumlow heat. Cover and cook 30 minutes until rice is soft, stirring occasionally. Stir in the raisins. Remove from heat. Serve warm topped with powdered cinnamon if desired.
