Hello everyone, this is J'adore.
This year, I'm showing you various recipe videos using the 'Lumi Oven', an 80L large oven from Wizwell, a kitchen appliance specialist.

Today's recipe is Earl Grey Grapefruit Cake, where grapefruit and Earl Grey go together lightly and refreshingly.
It's been so long since I've done a cakeicing video!
(It's been so long since I've iced it that my hands are shaking...lol)

It's not too sweet, and it's moist and soft.
There might be more complicated ways to make this cake, such as soaking grapefruit in syrup or steeping Earl Grey in cream,
but I've made it easy and simple by minimizing the process so that everyone can follow it,
and the taste is like a cake that took a lot of effort, so I really wanted to introduce it to you.
It's not too difficult, so please try making it!

▶ Ingredients (for 1 cake (15cm in diameter))

[Earl Grey Genoise]
115g Eggs
30g Egg yolks
75g Granulated sugar
15g Honey
81g Cake flour
12g Corn starch
20g Unsalted butter
30g Milk
2g Earl grey tea leaves

1) Beat the eggs and egg yolks well with a whisk.
2) Add sugar and honey and heat in a double boiler over hot water to 37~42 degrees Celcius.
3) Whip on high speed with a hand mixer until the egg foam remains for about 3 seconds when dropped.
4) Use the lowest speed of the hand mixer to make air bubbles uniform and dense.
5) Add the sifted flour and cornstarch and fold gently with a spatula.
6) Add the milk, unsalted butter, and Earl Grey tea leaves that have been warmed to 40~60 degrees Celcius and mix gently.
7) Drop them onto a round pan lined with parchment paper and bake at 160 degrees Celcius for 30 minutes. (Wizwell Lumi Oven top and bottom heating + convection)
* Since the heat intensity varies depending on the oven, check the cooking status and adjust the temperature and time.
8) Drop the baked genoise with the mold to release the steam, then turn it over on a cooling rack and let it cool.

[Syrup]
40g Water
17g Granulated sugar
2g Earl Grey tea leaves

1) Put all the ingredients in a bowl and heat to about 80 degrees Celcius.
2) Cool completely until the tea leaves are infused, then strain through a sieve.

[Earl grey whipped cream]
360g Heavy whipping cream
70g Mascarpone cheese
25g Granulated sugar
2g Earl Grey tea leaves I added it later in the video by mistake, but you can just put everything in from the beginning and whip it.

1) Put all the ingredients in a bowl and whip it.
2) Use 260g for the outer icing and piping, and the rest for the inner part.

[Two grapefruits] Cut off the skin and prepare only for the flesh.

*Storage: You can enjoy it for up to 3 days in the fridge. Make sure to store them in an airtight container so that the surface does not dry out.
