Great Barbecue in a Gaucho Traditions Center in Southern Brazil

A great barbecue, in its most genuine style, was prepared at CTG – a center of Gaúcha traditions, a native corner, in the municipality of Harmonia, southern Brazil. Whole beef ribs roasted over a fire, stuffed matambre (meat taken from the ribs themselves), pork and sausage, as well as side dishes such as cassava and salads. This was the lunch menu that moved the city, on March 24, 2024.

The preparations began on Saturday, with the removal of the "matambres" (meat removed from the ribs themselves) and the preparation of the filling, in addition to placing the pork to marinate. In the early hours of Sunday, the ribs were salted and put on the fire, while in the kitchen, after being skewered, the matambres (stuffed and rolled meat), the pork and the sausages went on the fire.

More than 300 people enjoyed the meat and other dishes, confirming the tradition of CTG Recanto Nativo, as one of the most representative and active in the state of Rio Grande do Sul.

CTGs are nonprofit entities that aim to disseminate the culture, traditions and folklore of gauchos, men and women from the state of Rio Grande do Sul, southern Brazil. The first CTG was founded in 1948, and today there are more than 3,000 spread across Brazil and abroad.
