True to its name, this idli staple is all fire! It is the perfect chutney powder to go with idlis.
Gun powder is also known as Idli podi. It is a flavourful condiment made of lentils, seeds and spices. It is known by different names such as milagai podi, gun powder, idli karam podi or chutney podi. Pudi or podi is a generic South Indian term that refers to powder. Since it is eaten with idli, it is known as idli podi. The heat of the chillies and the nutty flavour of the sesame seeds combine very well together. One could reduce the heat by adding desi ghee to the podi!

Recipe :
Gun Powder
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: Approx.170g
Ingredients:
4 tbsp split bengal gram (chana dal)
3 tbsp skinless split black gram (white urad dal)
3 tbsp sesame seeds
8 dry byadagi red chilies
1 tsp salt
1 tsp sugar
1 tbsp vegetable oil
Method:
Heat the oil in a deep pan on medium flame. Add the Chana Dal and roast till lightly fragrant.
Add in the Urad Dal and roast till fragrant and golden brown in colour. Add the red chillies and the sesame seeds and roast on a very low flame till they start to change colour and are fragrant.
Cool and grind in a grinder with the salt and the sugar to form a coarse powder.
To make chutney or dip, add vegetable oil or ghee till you get the desired consistency.
