In this video, I will show you how you can make salmon mosaic at home and how to use it in fine dining recipe. I will show you an easy fine dining technique on how to do mosaic fish and as a garnish, I make a sour cream avocado puree and carrots pickled with oranges. For Mosaic Fish
Materials
1kg salmon
Seaweed Powder
Salt
Method

Divide the fillet even into thin pieces. Transfer them to a plateau and garnish them with salt on all sides.
Dust a good amount of dried seaweed powder on top of the cut and gently rub this in.
Take some plastic packaging and cover your desk with 3 or 4 layers. Make sure it is nice and tight. Then put the fish together.
Use the starting point of the packaging to turn it tightly. Create a node on one side and then use the other end to turn it even tighter. Place a node on the other side and then shorten the sides.
Cook the fish at 46°C for 26 minutes. You can also do this in a steam oven.
Once cooked, transfer the fish directly to the ice bath. Make sure the fish is fully covered and that you use plenty of ice. Let this set in your fridge overnight.#cake #dessert #pquash #pumpkin #cooking #pizza #trending #training #train #fish #salmon #rollet #
