Healthy Mushroom Panini or Sandwich Recipe (Plant Based) | Easy Vegan Cooking!

▶ INGREDIENTS for Preparing Mushroom Filling:

500g / 6 cups(firmly packed) Cremini Mushroom (finely chopped you can also use a food processor to finely chop the mushrooms)
1 tbsp Garlic roughly chopped
1 cup / 140g Onion finely chopped
2 to 3 tbsp Olive oil
Salt to taste (I have added 1/2 teaspoon pink Himalayan salt)
1 teaspoon Thyme
1 teaspoon Paprika
1/4 teaspoon Cayenne pepper (optional)
1 tablespoon Balsamic vinegar
Ground black pepper to taste (I have added 1/4 teaspoon)

▶ Preparing Mushroom Filling:

To a heated pan, add olive oil and onion. Fry on mediumhigh heat until the onion starts to caramelize, while stirring frequently. Once the onion starts to caramelize, reduce the heat to mediumlow and add the chopped garlic. Fry for about a minute, while stirring frequently, be careful not to burn it.

Now, add the finely chopped mushrooms, salt, thyme, paprika, cayenne pepper and give it a good mix. The mushroom will start to release a lot of water. Fry on medium heat until all the water is gone and the mushroom starts to brown. Once the mushroom starts to brown fry for a couple minutes. Add Balsamic vinegar and mix well. Fry on mediumhigh heat for 23 minutes while stirring frequently or until the mushroom is nicely fried. Make sure to brown the mushrooms well it will add a lot of flavour to this dish. Turn off the heat. Now sprinkle freshly ground black pepper and mix. Once done, transfer the mushrooms in a bowl and allow it to cool down.

You can make the mushroom filling ahead of time and store it in the fridge for 2 to 3 days and when ready heat it slightly in the microwave and use it to make sandwich or wraps.

Whole Wheat bread (Whole Grain) smooth type
Vegan mayonnaise (NonVegans can use regular mayonnaise)
Vegan cheddar cheese (NonVegans can use regular cheese)
Mushroom filling

▶ INGREDIENTS for Mushroom Sub Sandwich recipe:
Whole Wheat Bread (Whole Grain) artisan
Vegan mayonnaise
Lettuce
Mushroom filling
Pickles Veggies:
1 cup / 100g green bell pepper
1 cup / 80g red onion
1 Tablespoon White Vinegar (I have used white wine vinegar)
