HOSILLOS WITH MOTE - MOTE WITH HUESILLOS - TYPICAL DESSERTS OF CHILE

In this video, I show you how to prepare HUESILLOS CON MOTE or MOTE WITH HUESILLOS, a delicious and refreshing dish typical of Chile.
The huesillos are dry or dehydrated peaches, usually made from canned peaches. The mote is a kind of wheat that is boiled in water with ashes to peel and soften it. Once that purpose is achieved, it is washed and strained for consumption.
The mote with huesillos is sold throughout the year, but reaches its maximum expression during the months of spring and summer, for being the juice of cooking the osillos a delicious and refreshing drink. The national holidays or independence festivities in September are the perfect setting for the typical MOTE CON HUESILLOS carts and the characteristic high cane glasses and their tasty content. The common thing is that they serve a minimum of two huesillos, a third of mote and two thirds of juice of cooking of the fruit. The parishioners and visitors line up to get their share of this delicacy. There are those who ask for only juice, others with much or little mote and most who consume it in the usual proportion. An indispensable requirement is to keep the urchins as cold as possible and the mote very fresh.
Nowadays, the mote with huesillos reaches new heights thanks to the chefs and cooks who have transformed it into mousses, puddings, ice creams, reconstructions and recreations of all kinds.
