Looking for something hot yet comforting then this Hot & Sour Vegetable Soup is your answer! As the name suggests, the popular soup is made by mixing a bunch of veggies and sauces for a piquant and umami flavour. Enjoy it on a cool winter night.

Ingredients

46 French beans, finely chopped
½ medium carrot, grated
2 fresh button mushrooms, finely chopped
¼ small cabbage, finely chopped
½ medium green capsicum
1 tbsp oil
1 small onion, finely chopped
2 inch celery, finely chopped
1 inch ginger, finely chopped
3 cups vegetable stock
Salt to taste
2 tbsps dark soy sauce
2 tbsps green chilli sauce
Fresh crushed black peppercorns to taste
2 tbsps cornstarch
1 tbsp white vinegar
34 garlic cloves, finely chopped
½ tsp sugar
1 stalk spring onion greens, finely chopped

Method

1. Heat oil in a deep non stick pan. Add onion, French beans, carrot, celery, mushrooms, cabbage, ginger, green capsicum and vegetable stock and cook.
2. Add salt, dark soy sauce, green chilli sauce and mix. Add crushed peppercorns and mix and let the mixture come to a boil.
3. Mix cornstarch in ½ cup water till smooth and add to the soup. Add ½ tbsp white vinegar and mix.
4. Add garlic, sugar and remaining vinegar and mix well.
5. Add spring onion greens and mix. Serving piping hot.
