Being able to turn saltwater into drinkable fresh water out at sea is necessity. Weather you want to have access to cleaner water, be able to stay away from civilization for longer periods of time. Or just become that much more self sufficient. Whatever the reason, a watermaker is an expensive, but game changing machine to have onboard.
