Lighting your Big Green Egg is pretty easy, you just need to have a good bed of coals, make sure the air flow is unrestricted and use the right lump charcoal.

For the Big Green Egg, I gather up the larger pieces of lump charcoal and make a pyramid in the middle. Then I will place a fire starter in the pyramid and light. I let the fire burn steady for 15 minutes.

Once the coals have ashed over, spread them out, place your grill grate back on the BGE and close the lid. You will set your dampers on the top and bottom according to what temp you want your Big Green Egg to cook at.

When you are done cooking, shut the damper at the bottom, replace the top cap with a ceramic one and let the fire to die down.
