The Eat More Plants Official GUMBO

1 package of Beyond Sausage by Beyond Meat Italian flavor, sliced
1/2 cup Oil
1/4 cup Vegan Butter
3/4 cup All Purpose Flour
1 Onion, chopped
1 1/4 cups Celery, chopped
1 large Green Bell Pepper, chopped
3 tbsp Garlic, minced
3/4 cup Scallions, finely chopped
1 handful of Parsley, chopped
1 14 oz can Stewed Tomatoes (you can sub diced tomatoes)
2 tbsp Tomato Paste
1 sprig of fresh Thyme (you can sub 1/2 tsp dried thyme)
2 Bay Leaves
1 tbsp Cajun Seasoning (brands: Slap Yo Mama, Zatarain's, or Tony C)
1/2 tbsp Paprika
3/4 tsp Cayenne Pepper
3 tbsp Louisiana Hot Sauce (or hot sauce of choice)
1 tbsp Sugar
2 tbsp White Vinegar
2 tbsp Vegan Worcestershire Sauce
Vegan Proteins
1 package Beyond Sausage (prefried)
1 package No Evil Foods Comrade Cluck "No Chicken"
1 package Be Leaf Vegan Shrimp
12 packages Enoki Mushroom, chopped in half
1 1/2 cups Okra
2 tsp Gumbo File
Salt and Pepper, to your liking
