Olluco, such as charqui, are purely Peruvian ingredients, it is one of the many varieties of potatoes that we have in Andean Peru, it is also known as lisas or papa lisa, it has a high nutritional value, especially in collagen.
As for the charqui, it is born in the Andean part with the alpaca meat made with enough dehydrated salt and dried in the sun, thus maintaining its preservation for a long time.
Over time it is also customary to make charqui de vicuña and llama, its name in Quechua is cecina.
Now it is a dish consumed not only in Peru and South America,
It is a traditional ancestral dish of our Peruvian cuisine
INGREDIENTS (6 PEOPLE)
1 1/2 KILO OF PICADO OLLUCO julienne
2 large potatoes chopped julienne
1/2 kilo of meat the softest (loin or buttock) chopped
300 gr of chopped charqui
1 small chopped onion
3 tablespoons ground chili pepper
2 tablespoons of yellow pepper, or ground mirasol
salt, oregano, pepper, cumin to taste
1 tablespoon ground garlic
2 cubes of meat broth
oil quantity needed
1 bunch of parsley

PREPARATION
chop the olluco to julienne and proceed to wash as seen on video to remove the rubberiness of some who have more than others, and reserve it
We heat a jet of oil in the pot that is going to prepare this delicious olluquito with charqui and meat
Add the onion and garlic, fry for 1 minute
Add the red and yellow peppers, pepper, cumin to taste the cubes of meat let cook for a few minutes always moving constantly, we can also add the crushed oregano
Then we add the meat and the charqui and the parsley tied mix well and cover the pot let it sweat for 5 minutes on fire
Now we add the potatoes and a little water, that does not cover the potatoes and 1 spoon of salt we let cook for 10 minutes
Now we add the ollucos and do not mix and add a little water because the ollucos will let go of the water, let it cook for 10 minutes
Now if we can mix and see how the potatoes are dissolving and let cook for a few more minutes we try the salt and ready we finished with this rich straight olluquito with charqui and meat we serve it accompanied by rice with chopped parsley and good appetite.
