How to Double Smoke a Boneless Ham for Beginners

This video shows how to double smoke a boneless ham.

Always exercise caution and safety when handling raw meat as well as using your grill.

Process:
1. Pat dry with paper towels
2. Duck Fat spray binder
3. Apply rub of your choice
4. Place on cooling rack and into refrigerator overnight to develop a pellicle
5. Transfer to smoker
6. Insert meat probe
7. Get smoker up to 250 degrees
8. Insert water pan into smoker
9. Spritz periodically
10. Remove at IT of 145 degrees
11. Wrap in foil/rest 30 minutes
12. Slice
13. Enjoy!
