Dr. Joel Fuhrman starts off this discussion on visceral fat with a little introduction to the brain. Over time, an obese person loses control over their eating habits due to changes in their brain. Which part? The 'appestat' located in the hypothalamus which regulates hunger and signals us when enough food has been eaten. As soon as blood sugar levels drop below a certain point, information is sent to the appestat which releases hormones making us feel hungry. Conversely, once we have eaten enough these messages and hormones reverse and make us feel full, telling us to stop eating. Those who are lean have a properly functioning appestat while those who are overweight don't, meaning they cannot stop themselves from eating more than necessary.

So now the question is, what messes up the appestat that leads people to eat too much and gain weight? Carbs? Absolutely. But there's more: Processed sugar, salt, and oil. Here's Dr. Fuhrman for the rest of the nittygritty.
