ender 3 S1 bed leveling does takes time and can be challenging. It does require patience and doesn't always happen on the first time.

Once leveled print the angel.stl, first from Leo Benchy project, it only takes 2 minutes. Don't print a project that is 30 minutes long when testing to see if your bed is leveled and calibrated.

3D calibration Cube will work too

Calibration cheat sheet default printer setting work work though. Dynamic does take longer standard print settings are going to be thinner..
