How to make a maple pecan Madeleine (recipe)

✔ Ingredients (depending on the fan size up to 912)

105g Unsalted butter
90g of eggs
95g Cake flour
15g Almond Powder
3g BP
60g sugar
1g salt
25g maple syrup
2g Vanilla Bean Paste 2g (optional)

80g Roasted pecan
60g Maple syrup
1g of salt

✔ It was baked at 200℃ and 180℃ for 14 minutes.
✔ Use eggs at room temperature, butter at between 40 and 50℃ , and butter can be melted with a microwave (not boiled, just melted).
✔ The baking temperature and time can vary depending on the oven, and the baking time depends on the madeleine mold size. (The frame I used is a little big.)
✔We recommend you to make pecans 30 minutes before baking madeleine. It's a little sticky if left alone for a long time.
