Tuo Zaafi is an authentic local Northern Ghanaian delicacy and it is also popularly called Diehuo. It is made up of 3 separate dishes; the meat stew, the ayoyo stew or sauce and the Tuo Zaafi itself.

Ingredients:
TUO ZAAFI(DIEHUO)
Corn or Maize flour(1 and half cups)
Cassava flour( 1 cup)
Water 1.5 litres
AYOYO STEW
Ayoyo Leaves(Jute leaves)
Salt to taste
Dawadawa powder or beans( Locust beans)
Momone( Salted fermented fish)
Baking Soda( substitute with kanwu)
Dry herrings( Both Amane and Yamane nsasaawa)
Onion( chopped or blended)
HAUSA STEW
Palm Oil( you can use any healthy vegetable of your choice too)

Seasoning cube or powder of your choice
Tin Mackerel( You can use smoked Mackerel)
