INGREDIENTS
300G of pork shoulder
½ tsp of baking soda
1 tbsp of cornstarch
1 tsp of salt
1 tbsp of sugar
A little bit of white pepper
3 tbsp of water
1 tbsp Chinese rice wine (SHAOXING) or sherry wine
1 tsp of dark soy sauce
1 tsp of light soy sauce + ¼ cup for the sauce
2 tbsp of sesame oil + 1 tsp for the sauce
100G of chopped cabbage (if you get the Chinese, the better)
2 green onions, finely chopped
Around 2 tbsp of finely chopped fresh ginger + 1 tsp for the sauce
2 garlic, finely chopped
1 tsp of Chinese Chili and Garlic Sauce
vegetable oil to cook the pot stickers
cabbage, if you have a steamer
Wrappers:



2 and a half cups (300g) of wheat flour
Salt to taste
100 mL of boiling water
