Ingredients required for making Rajma Masala Recipe & Jeera Rice
Rajma Masala Recipe Serves 6 to 8
* 250 gm / 1&1/2 cup pinto beans/large red kidney beans. Dissolve a tablespoon of salt in a liter of water and soak the beans overnight. Discard the water before cooking and rinse the beans thoroughly with fresh water.
For the paste
* 2 large or 4 medium to large/334 gm red ripe tomatoes. You can also use the same quantity of crushed or diced canned tomatoes
* 300 gm /1 large + 1 medium onions
* 18 gm / 4 large garlic cloves
* 23 gm ginger
* 1 green chilli (optional)
* 2 teaspoons salt or as per taste
* 4 tablespoons oil
* 1 dry bay leaf
* 1 black cardamom
* 1 inch length cinnamon stick
* 1 teaspoon cumin seeds (jeera)
* 1 teaspoon garam masala powder
* 1 teaspoon dried fenugreek leaves (kasoori methi)
* coriander leaves as much desired (optional)
* 4 cups hot water to cook beans + 1/2 cup added later
For spice paste
* 1/2 teaspoon turmeric powder (haldi)
* 1 teaspoon Kashmiri red chilli powder. Please adjust the proportion according to your preference.
* 2 teaspoons ground coriander (dhania powder)
* 1 teaspoon ground cumin (jeera powder)
* 1/4 th cup water
For making cumin(jeera) rice
* 2 cups basmati rice. Wash the rice thoroughly until the water runs clear and soak it preferably for 15 mins. Please drain all the water before adding the rice to the pot.
* 3 & 1/2 cups of hot water . Please use the same cup used to measure out rice to measure water.
* 1 tablespoon oil
* 1 tablespoon ghee
How To Make Homemade ghee    • HOW TO MAKE GHEE AT HOME WITH UNSALTE...  
* 1 dry bay leaf
* 1 small cinnamon stick
* 2 green cardamoms
* 1 heaped teaspoon cumin seeds (jeera)
* 1/2 teaspoon salt
* 1 teaspoon lime/lemon juice/white vinegar
* chopped coriander leaves for garnish (optional)
Method
* Add beans to pressure cooker along with 4t water and teaspoon salt
* Pressure cook for 13 mins if using regular pressure cooker or 15 mins if using IP. Please note if using large red kidney beans pressure cook it for 20 25 mins as it takes longer time to cook. After prne please allow all the pressure to be released naturally and only then open the lid of your cooker. If using an open pot to cook, the cooking time will be more and you will need more water.
* Make a smooth paste with ginger, garlic, green chilli, a tablespoon of finely chopped onion and tomatoes
* Add oil to pot and add the bayleaf, cinnamon stick, crushed black cardamom and cumin seeds.
* Add finely chopped onions and just pinch of salt and stir till onions are just golden in color
* Add the spice paste and fry on low heat for 2 mins
* Add the blended paste and cover pan partially.on medium low heat
* Stir it from time to time on medium low heat till the mixture becomes pasty.
* Add the cooked beans, chopped coriander stem, garam masala powder and kasoori methi
* Simmer with cover on for 15 mins
* Mash few beans with the back of your spoon, garnish
For making jeera rice Serves 3
*Warm oil+ ghee in pot
* Add dry bay leaf, cinnamon stick, green cardamoms and cumin seeds
* Allow the seeds to crackle on medium heat to release flavor but please be careful that the seeds do not turn black
* Add the washed and drained rice
* Stir the rice very gently on medium low heat for about 2 minutes
* Add water, salt, lemon/lime juice/vinegar
* Allow water to come unto boil on medium high heat
* Once water boils, reduce heat to medium and allow the rice to come to surface
* Cover and cook rice on very low heat for 8 mins
* Taste the rice after 8 mins. If it is very chewy and the water has gone dry, just add a splash of water and give it a few more minutes.
* Switch off heat, fluff up the rice gently, add coriander leaves and keep it covered for 10 minutes or more. The more the rice sits the fluffier it gets.
