How to make SOFT u0026 CHEWY KETO chocolate chip cookies

Hi Foodie Friends!


We are making more chocolate chip cookie this weekend! But, these are not your average cookies, today, I show you how to make super soft and chewy keto chocolate chip cookies. I have made so many types of chocolate chip cookies on my channel, so it is about time I make a keto version for all you low carb babes. Just some info, these cookies are made with Erythritol and it's a sugar alcohol used as a sugar substitute. It has 0 calories and has no effect on glucose or insulin levels. Alright, now we know what erythritol is, let's get to the recipe!


INGREDIENTS
5 tbsp melted butter
1/4 cup Erythritol (I used the Whole Earth brand, you can also use Swerve or Monkfruit sweetener)
1 egg
1 1/2 cups fine almond flour
1/8 tsp salt
1/4 tsp baking soda
1 cup sugar free chocolate chips (I used Hershey's sugar free chocolate chips)



INSTRUCTIONS
1. In a bowl combine the butter, erythritol and egg and mix until combined
2. In a separate bowl, combine the flour, salt and baking soda
3. Combine the wet ingredients with the dry ingredients and combine until a cookie dough forms
4. Fold in the chocolate chips
5. Chill in the fridge while the oven preheats to 350F
6. Out of the fridge, roll the dough into medium sized balls and place on a baking tray
7. Bake at 350F for 68 minutes
8. Out of the oven, cool for 5 mins and enjoy!
Recipe yields 12 cookies
