Here's a classic recipe for Jamaican Jerk Chicken:

Ingredients

2 whole chicken (bonein, skinon)
4 green onions, chopped
12 Scotch bonnet peppers, seeded and chopped (adjust to taste)
4 garlic cloves
1 thumbsized piece of fresh ginger, peeled and chopped
1/4 cup fresh thyme leaves
2 tablespoons soy sauce
2 cups pineapple juice
2 tablespoons brown sugar
1 tablespoon allspice
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon black pepper
1 teaspoon salt
1 lime, juiced
