Quick and Easy Vegan Curry Mayonnaise Recipe
Ingredients:
1 cup cannellini beans (or any white beans)
1/2 cup sunflower seeds
1 clove garlic (or 1/4 to 1/2 teaspoon garlic powder)
1/2 teaspoon onion powder
1 teaspoon curry powder (adjust to taste)
1 tablespoon apple cider vinegar
1/2 cup water
Instructions:
In a blender, combine cannellini beans, sunflower seeds, garlic, onion powder, and curry powder.
Add apple cider vinegar and water to the blender.
Blend until the mixture reaches a smooth and creamy consistency.
Adjust the seasoning to your taste, adding more curry powder or salt if desired.
Use the curry mayonnaise as a delicious and healthy alternative in sandwiches, pasta salads, or mixed through mashed potatoes.
