For Kway Teow
1 small minced Garlic
150g flat rice noodles (kway teow)
1 tsp light soy sauce
1 TBSP dark soy sauce

For Egg Gravy
2 large prawns, peeled and deveined
3 Scallops
1 clove garlic, minced
90g Fish Cake
100g Choy Sum
23 tablespoons extra virgin olive Oil for cooking
1 egg
1/2 tsp light soy sauce
2 TBSP dark soy sauce
1 TBSP Oyster Sauce
1/2 Cup water or Chicken Broth
Few drops of fish sauce
1tsp ABC Sweet sauce or 1tsp sugar
1 tsp Chinese ShaoXing wine
Corn Starch Water (2tsp Corn Starch & 1tsp water)
Banana Leaves for plating (optional)

Instructions
1.) Stirfry the Rice Noodles: In cooking pan, heat a bit of olive oil over mediumhigh heat. Add minced garlic and stirfry until fragrant.
2.) Add the fresh rice flat noodles to the pan. Stir in light soy sauce and dark soy sauce. Stirfry until the noodles are evenly coated and heated through. Place the stirfried rice noodles on a serving plate or banana leaves.
3.) Prepare the Egg Gravy: Heat olive oil in same pan over medium heat. Add minced garlic and stirfry until fragrant.
4.) Add fish cake slices, prawns and scallops. Stirfry until seafood is cooked through. Remove Prawns and scallop only from the pot and set aside.
5.) In the same cooking pan, add in the choy sum and stir fry for few minutes.
6.) Pour in the Oyster Sauce, light soy sauce and crack an egg and scramble using chopstick until slightly set.
7.) Add in water or chicken broth, fish sauce, ABC Sweet sauce or sugar, and Chinese ShaoXing wine. Stir to combine.
8.) Once gravy is boiling, gradually pour in the corn starch water while stirring continuously until the sauce thickens to your desired consistency. Turn off the heat and ready to serve.
9.) Assemble: Pour the prepared egg gravy over the noodles. Serve with Green Chillies!

指示
1.) 炒米粉在平底锅中用中高火加热一点橄榄油。加入蒜末炒香。
2.) 将新鲜米粉加入锅中。加入生抽和老抽搅拌。炒至面条均匀裹上一层热透。将炒好的米粉放在盘子或香蕉叶上。
3.) 准备蛋汁在同一个平底锅中用中火加热橄榄油。加入蒜末炒香。
4.) 加入鱼饼片、虾和扇贝。炒至海鲜熟透。仅将虾和扇贝从锅中取出并放在一边。
5.) 在同一锅中加入菜心炒几分钟。
6.) 倒入蚝油、生抽打入鸡蛋用筷子炒至稍凝固。
7.) 加入水或鸡汤、鱼露、ABC甜酱或糖、以及绍兴酒。搅拌混合。
8.) 肉汁煮沸后逐渐倒入玉米淀粉水同时不断搅拌直至酱汁变稠至您想要的稠度。关掉火准备上菜。
9.) 组装将准备好的蛋汁倒在面条上。与青辣椒一起食用
