KUDU TENDERLOIN: Marinate the kudu tenderloin in Pinotage red wine, olive oil, lemon juice and garlic. Place it on the fire to grill. Add Klipdrif (a locally produced brandy) to the meat on the fire. Flip and cook until finished.

PANFRIED BUFFALO LIVER: Slice onions and green peppers, then panfry. Place the liver slices in the frying pan, and add seasoning blend. Flip and panfry for 7 minutes. Serve with Chef Poka’s secret home made salsa.

GRILLED BUFFALO MEAT: Chop up the buffalo leg meat and season with homemade seasoning blend. Grill.
