Idli Podi is a coarse mixture of ground dry spices that typically contains dried chillies, urad, chickpea and sesame seeds. Tamils traditionally use idli podi as a condiment on idlis, dosas and other South Indian dishes. Idli Podi is a must to have with all kinds of Idlis and is part od spice powders in any south Indian homes

Ingredients
1 cup Chana dal
1 tbsp Coriander seeds(optional)
few 0 Curry leaves
few piece Garlic (optional)
pinch Hing
pinch Methi seeds
1/2 t sp Mustard seeds
to fry Oil
1/2 tsp Peppercorns
10 number Red chilli(Whole)
to taste Salt
few piece Tamarind(whole)
1/2 cup Urad dal
Directions
• 1. In a pan put oil ,red chillies ,chana dal,mustard seeds & methi seeds.Mix well . 2. Add peppercorns & when chana dal gets golden add urad dal,coriander seeds.Cook slowly & well to ensure every ingredient is cooked well. 3. Add tamarind,garlic pieces,hing powder,salt & curry leaves to the mixture.Mix well & cook it on a low flame. 4. As the entire mixture becomes golden in color switch off the flame.Keep mixing till it has cooled down. 5. Blend the mixture in a blender & add salt if required. 6.Idli powder is ready to be smeared on idlis
