Willie, Sarah and their dogs Jack Spaniels & new puppy, Nori, continue their biggest adventure yet leaving their suburban life and moving over the sea to a remote cottage on the Isle of Skye, off the west coast of the Scottish Highlands.

In this episode, the Skye Lifers are experiencing a brutally cold "summer" on the Isle of Skye. There are clouds, rain, hailstorms and even snow on the mountains during this unseasonably cold June.

Willl our fledgling cottage garden survive the cold snap and will we have enough firewood to see us through the summer..?!

Sarah is hoping that her summery hedgerow foraging trip will bring the sunshine back, as we make elderflower cordial in the cottage kitchen.

Elderflower Cordial Recipe:
(makes 3 litres)

1.5L water
2.5kg sugar (caster or granulated)
75g citric acid crystals
2 large unwaxed lemons (juiced)
20 elderflower heads

1. Strip any stalks from the elderflowers to avoid any bitter flavours
2. Bring water to the boil
3. Add sugar and stir until completely dissolved
4. Bring sugar water back to the boil
5. Add citric acid crystals, lemon juice & rinds and elderflowers to the sugar water
6. Cover with a lid & remove pan from heat
7. Strain the syrup after 24 hours using a muslin or linen cloth (do not squeeze the cloth or your syrup will be cloudy)
