It has never failed me. I've been making this Christmas Panettone for 25 years! Simply wonderful
Ingredients and Preparation
for the ferment
2 tablespoons of wheat flour
1 spoon of sugar
80ml of warm milk
19g dry yeast
Mix and let sit for a few minutes
In another container
500g wheat flour
In the center add
80g of sugar
Zest of 1/2 orange
1 teaspoon panettone or vanilla essence
2 eggs
1 teaspoon of honey
And the ferment that we had reserved
Mix everything with a spatula
Knead until everything is integrated
Add 80g of butter at room temperature
Knead until you obtain a smooth dough
Let it rest for 1 hour
Stretch the dough into a rectangular shape
Add 300g of candied fruits and nuts and spread over the dough.
Roll and cut to form a round dough again.
Pour into a mold 18cm in diameter by 10cm high.
Cover and let rest for approximately 1 hour
Place in a preheated oven at 180 degrees for 45 minutes.
For the glaze
200g powdered sugar
Juice of 1/2 orange
Mix and add to the panettone
Decorate with nuts
