Jollof Rice and Chicken

Jollof rice is a a popular dish from West Africa. A flavoursome dish that is spicy but can be adjusted to your own taste. Use it as a side dish or as a main. If you want to cheat with the sauce grab a bottle of tomato Passata and add the herbs and spices from the sauce list.

Tomato sauce
1 large ripe tomato, cored and quartered
1 large red capsicum, seeded and roughly chopped
1 whole habanero pepper, stem removed
1 Jalapeño, stem removed
4 cloves of garlic, peeled and diced
1 tbl minced garlic
2 cups chicken stock

Rice
1/3 cup olive oil
1 red onion, diced
1 tub tomato paste
2 tbs smoked paprika
1 tsp curry powder
1 tsp dried thyme
½ tsp ground pepper
¼ tsp turmeric
2 ¼ cups basmati rice
1 bay leaf
Coriander for garnish

Chicken
6 thigh fillets, diced
1tbs smoked paprika
1 tsp curry powder
1 tsp thyme

Method
1. In a blender combine tomato sauce ingredients. Blend till smooth and set aside
2. Heat olive oil over medium heat. Add onion and cook for 60seconds, clear a space and add tomato paste. Cook for a few minutes, till you can smell the sauce. Add seasonings and cook for 2 minutes, again until you can smell the spices.
3. Turn off heat and add rice and mix through till all the rice is coated. Return to heat add tomato sauce mix, stir through. Add bay leaf and bring to a simmer then cover and cook on low for 20min with a lid on. Do not remove lid.
4. In a separate fry pan add some olive oil and fry off the diced seasoned chicken. This will take about 10min.
5. After 20min remove rice from heat, do not remove lid. Set aside for another 15min, at least.
6. Once rice is done serve up with chicken and some coriander for garnish.
