Celebrate Onam with this authentic Sadya Sambar recipe!

RECIPE
First, soak a piece tamarind of gooseberry size in hot water for about 30 minutes.
Once the tamarind gets soft, squeeze the tamarind in the water itself. Strain it and discard the strained tamarind and keep the tamarind water aside.
To a pressure cooker add,
Masoor dal/ red lentils – ½ cup (washed)
Turmeric powder – ¼ tbsp
Salt – ¼ tbsp
Coconut oil – 1 tbsp
Water 1½ cups
Cook for 1 whistle
When the pressure has released, Add
Carrot – 100g
Potato –100g
Pumpkin –100g
Raw plantain –100g
Ash gourd –100g
Elephant yam – 100g
Turmeric powder – ¼ tbsp
Salt – ¼ tbsp
Water – 2 to 3 cups
Green chilly – 1 or 2 nos
Pressure cook this for 1 whistle.
To a curry pot, add
Coconut oil – 3 tbsp
Shallot 5 to 7 nos
Moringa drumstick – 100g
Lady’s finger – 150g
When these two have sautéed, add tomato – 100g and mix well.
Then add,
Coriander powder – 2 tbsp
Turmeric powder – ½ tbsp
Chilli powder – 1½ tbsp
Fenugreek powder – ½ tbsp
Urad dal powder – 1 tbsp
Mix these altogether and add tamarind water to this. Let it boil. Add small piece of asafoetida and ½ cup water to this and boil well. Check for salt and add if necessary. Then add the vegetable mixture in the pressure cooker to this curry pot and mix well. Add 1 or 2 tbsp of melted jaggery or jaggery powder to this.
To another pan, add some coconut oil, followed by mustard seeds. When it has spluttered, add dried red chillies and curry leaves. Transfer this to our curry pot and add some coriander leaves also. Close the lid for a few minutes. Later, mix well and that’s it!! The super tasty Sambar is ready!!
