1 cup raw peanuts
1 cup raw almonds
1 cup raw cashews
1 ½ teaspoons Kashmiri chili flakes or powder
½ teaspoon crushed black pepper
1 teaspoon salt, more to taste
2 teaspoons sugar (crystallized sugar preferred)
23 sprigs curry leaves
2 teaspoons lemon juice
Tips:
1. Opt for raw nuts instead of preroasted for better flavor
2. Use enough oil to fully coat the roasted nuts with the dry spices.
3. Choose turbinado or crystallized sugar for the best results, since it doesn't melt and gives a sparkling appearance to the nuts.
