Tiramisu is one of my all time favorite desserts. It took a lot of trial and error to get the lady fingers just right. This keto tiramisu tastes just like the recipe I would make in pastry school every chance I got.

Tiramisu is a dessert that has many variations so the filling is kinda up to you. Traditionally its made with mascarpone cheese whipped up with whipped cream or egg whites and different flavorings. Cream cheese can be substituted and make a cheesecake filling on top your lady fingers that you soak in some kind of flavored liquor and simple syrup mixture.
My mission was to make the best keto lady fingers. I found that different sweeteners bake differently so I included 2 different sweeteners in directions.

Keto Lady Fingers Recipe:
3 large eggs separated plus 1 egg white
1/3 cup allulose sweetener or granulated monkfruit/erythrotol
36 g coconut flour (yes I always weight my flour because its more accurate when doing 7 versions) but its equal to 1/4 cup + 1 Tbs.
1/2 tsp xanthan gum
1 tsp baking soda
1/4 tsp salt
1 Tbs apple cider vinegar
1 tsp vanilla

Preheat your oven to 375 if you are using allulose, 400 if monkfruit sweetener. Then get all of your ingredients out and measured. You want your eggs at room temp separated into metal bowls. Sift your dry ingredients together, flour, soda, salt and xanthan gum, and measure out you vinegar and vanilla. Get your sheet tray and silt pat ready and a piping bag. Whip your egg whites to stiff peaks while slowly adding half of the sugar. Then over a double boiler whip your egg yolks and the rest of the sugar until it triples in volume, thick and pale in color (about 5 minutes), whip in your vinegar and vanilla, stir in dry ingredients. Take one third of your egg whites and whip them into the egg yolk mixture then fold another third in then the last third. Pipe onto silt pat into fingers or rounds. bake for 78 minutes for the allulose and 89 for monkfruit. I got 32 small fingers out of this recipe.

My Tiramisu filling recipe:
8 oz. mascarpone cheese
1 Tbs. rum or any liquor you want or omit entirely
1/4 cup lakanto powdered sweetener or alternative sweetener of choice add to your taste
1 cup heavy cream or 3 egg whites whipped to soft peaks
3 egg yolks
1 tsp vanilla extract or rum or coffee extract

Whip the egg yolks over a double boiler with half the sugar until thick and pale, whip in the rum or flavoring of choice, then whip in the mascarpone cheese. Whip your cream or egg whites to soft peaks with remaining sugar and extract of choice. Fold into mascarpone mixture.

Soaking liquid:
Strong coffee2 Tbs. instant espresso and 1/2 cup hot water
1 Tbs. rum or liquor of choice may need more or less add to taste
Alternative sweetener to taste dissolved in hot coffee or 30 drops stevia drops
Mix everything together in a shallow bowl

Assembly: You can make in any pan you'd like, the lady finger recipe will give you about 2 layers in a 8 inch round pan with 2 layers of the cream mixture.
Lightly dunk the lady fingers into the coffee mixture and place in a single layer in vessel of choice and layer with cream mixture, finish top with cream and a dusting of cocoa powder. Refrigerate for 4 hours before serving.
