Friends, I think that everyone loves KUTAB, but not everyone dares to cook them, and even more so in such an authentic way, that is, as it should be for real kutabs, on saj and on firewood. We have a lot of varieties of kutabs in Azerbaijan, starting with the smallest kutabs, the size of a child’s palm, from the Absheron village of Jorat and ending with simply huge kutabs half the size of an average tray, which are traditionally prepared in the northern and western regions of our country. In addition to the size, kutabs are also very diverse in their filling, we have them with meat, offal, greens, pumpkin, greens / cheese, etc. In short, kutaby is a very tasty thing, but it takes a lot of time and effort.
