Andrew's GrainFree Pancakes (makes around 12)
3 large eggs
1/3 cup peanut butter (we use both regular AND sugarfree, both work fine)
2/3 cup coconut flour
scant 1/2 tsp. baking soda
at least 1 cup milk (until the batter looks right)
Mix everything together and cook on a preheated skillet or griddle for 23 minutes on each side until cooked through.
**All these measurements are approximate as the children just kind of "eyeball" the ingredients and toss them in a bowl!**
