The history of ramen, surprisingly, dates back to the Muromachi period (13361573) when it was introduced to Japan. However, ramen at that time was not in its present form, but was similar to a preserved food called “portable noodles” that came from China. It was not until the late Edo period (16031868) and Meiji period (18681912) that ramen became a fullfledged food in Japan. In the 20th century, ramen became popular as a food for the common people in the postwar black market, and many variations of ramen were created in various regions. In 1958, Nissin Foods' “Chicken Ramen” was the world's first instant ramen product, and it was a huge hit. Ramen became a national dish that could be easily prepared at home and spread throughout the world. Japanese ramen has continued to evolve throughout history and is now established as a major gourmet food that can be enjoyed in a variety of styles.
