How to make Lemon Bars: Lemon Curd for Desserts or Petit Fours. In this video you are going to learn how to make a Lemon Curd cream that will be used to make desserts, or to simply spread on toasts or scons. Here are the ingredients of the recipe:
Ingredients:
Pudding base:
3 eggs
165 gr common sugar
150 gr butter
150 gr flour 0000
2 gr fine salt
1 tsp vanilla essence
Zest of 1 lemon
Fresh blueberries c / n (optional)
Lemon curd:
6 egg yolks
2 eggs
240 gr common sugar
Zest of 2 lemons
120 gr lemon juice
240 gr butter
7 g of unflavored gelatin
35 gr / ml of water
Mold: Frame 20 cm long x 15 cm wide x 5 cm high
Optional decoration: You can use buttercream, chantilly cream, meringue, whatever you like the most.
