Lemon Ricotta Cake. The perfect tangy and delicious Italian cake for anytime of the day.

Ingredients:

  400 g of all purpose flour
400 g of sugar (preferably brown sugar)
1 large egg
2 lemons
400 g of fresh ricotta cheese
Orange blossom essence
Baking soda 3 tsp
vanilla powder
powdered sugar (for garnish)

Recipe:

1. Preheat the oven to 350 degrees fahrenheit

2. In a large bowl, mix the flour, sugar and baking soda. (Make sure to mix it very well so the baking soda is distributed evenly throughout the cake.)

3. Mix in the ricotta cheese by hand. (you don’t need to drain it as the water from the cheese will be great for the dough).

4. Mix in one large egg.

5. Add the zest of two lemons.

5. Mix in the juice of two lemons.

6. Add a few drops of orange essence to add to that delicious flavor.

6. After the dough is a smooth consistency, butter your cake pan. (We are using a 23 cm springform cake tin)

7. Pour your batter into the pan and spread it out evenly.

8. Bake for 40 min at 350 degrees.

9. Let it cool and enjoy!

Useful tip:
Sprinkle some powdered sugar ontop and add a flower for that gorgeous look! Just like you are.
