Llapingacho (also Llapingachos or Yapingachos) are fried potato pancakes (patties) served with a peanut sauce. ¾ cup peanut butter
5 large Russet potatoes
1 finely diced onion
1 finely diced tomato
2 tsp. ground annatto
1 lemon
4 chorizo (sausage)
Bunch of chopped cilantro
Salt to taste
4 Eggs
Lettuces

2 cucharaditas achiote molido
