Loafin' Around ~ Meatloaf u0026 Mashed Potato Casserole

Hey y'all!

Today, I am sharing a fun and hearty twist on a classic meatloaf! This meatloaf and mashed potato casserole takes a little bit of time to make, but it's very easy to assemble, is super costeffective, and is great if you are feeding a crowd! Just a warning, you may have to make 2 of these because second helpings are guaranteed!!

Ingredients:

1 Vidalia onion, diced
1 green bell pepper, diced
1.5lbs of ground beef
4 eggs
45 hamburger buns or 78 slices of bread, broken into small pieces
1/2 cup of milk
2 cups of dark brown sugar, halved
1 cup of ketchup, halved
1 cup of barbecue sauce, halved
2 4oz packages of instant mashed potatoes
Grated or shredded cheese (optional)

1.) In a large mixing bowl, add the onion, bell peppers, ground beef, eggs, bread pieces, 1/2 cup of ketchup, 1/2 cup of barbecue sauce, and 1 cup of dark brown sugar. Add in the milk as well, but only add half. The mixture may be wet enough that the full half cup isn't needed.

2.) Mix the ingredients together well. If the mixture isn't binding together well or feels too wet, add more bread. If the mixture feels too thick and stodgy, add more of the milk.

3.) Once the mixture is an acceptable consistency, dump into a casserole dish or cast iron skillet. Spread evenly in the pan. Bake at 350 for about 45 minutes.

4.) Once the initial bake is over, remove from the oven, but don't turn the oven off. In a separate bowl, mix the other half of the ketchup, barbecue sauce, and brown sugar together. Dump the mixture on top of the meatloaf and put it back in the oven for 15 minutes.

5.) While the meatloaf is in the final stage of baking, make your instant mashed potatoes as directed on the package. If you want to top your casserole with cheese or green onions, now would be the time to prep that as well!

6.) Once finished baking, remove the meatloaf from the oven. Take your mashed potatoes and spread on top of the meatloaf similar to how you would ice a cake. Once potatoes have been added as well as any optional toppings, you are ready to enjoy!!
