खमंग आणि पौष्टिक कढीपत्त्याची चटणी बनवण्यासाठी लागणारे साहित्य
• १/२ कप किसलेलं सुकं खोबरं
• २~३ मोठे चमचे तेल
• १/२ कप पंढरपुरी डाळं
• १/२ कप पांढरे तीळ
• १ मोठा चमचा जिरं (ऐच्छिक)
• १/२ कप लसूण पाकळ्या
• कढीपत्त्याची पानं
• १ चमचा लाल तिखट
• १ चमचा आमचूर पूड
• चवीनुसार मीठ
• चवीनुसार साखर

Let’s make khamang, healthy kadhipatta chutney today. Kadhipatta means curry leaves. This is a tasty and flavorful side dish that has good shelf life. The main ingredient is curry leaves along with some spices and coconut and roasted chana dal. Curry leaves are not only flavorful but also provide a wide range of nutrients. Generally one tends to remove the curry leaves from the dishes. But today, here I am with this chutney recipe that everyone will love and won’t hesitate to consume curry leaves. They are rich in vitamins and minerals and helps to control blood sugar. It promotes heart health, and has antiinflammatory properties. It has many other benefits along with helping in hair care and skin care. It also aids in weight loss by improving digestion and metabolism!! Ingredients:
• 1 cup grated dry Coconut
• 2~3 tbsp Oil
• 1/2 cup roasted Chana dal
• 1/2 cup white Sesame seeds
• 1 tbsp Cumin seeds (Optional)
• 1/4 cup Garlic cloves
• Curry leaves
• 1 tsp Red chili powder
• 1 tsp Amchoor powder
• Salt to taste
• Sugar to taste

Method:
• Roast dry coconut on low to medium heat until it gets nice golden color and take it out into a dish.
• Heat up oil in a pan and add roasted chana dal.
• Fry the chana dal well until it gets nice golden color and take it out into a dish.
• In the same oil add sesame seeds and cumin seeds and fry well together until they get golden
color. Take them out into a dish.
• Adding cumin seeds is optional. You can skip it if you don’t want.
• In the same oil fry garlic well and take it out into a dish.
• Wash and dry curry leaves well.
• Fry curry leaves until all the moisture is removed and turn nice and crunchy and take it out into a
dish.
• Let the mixture cool down and transfer it into a blender jar.
• Blend it well into powder and take out into a bowl.
• Add red chili powder, amchoor powder, salt and sugar and mix well.
• You can add chat masala in place of amchoor powder.
• Blend it again into coarse powder and kadhipatta chutney is ready.
• You can store it in an airtight container.
• It has shelf life of about a month.
• You can have it as side dish or as masala for sabji instead of vatan.
