Mandarin Orange Cake
1 Yellow Cake Mix
20 to 22ounce Can Mandarin Oranges, UNDRAINED
2 Egg Whites
1/4 cup Water
Mix together and pour into a 9 x 13 x 2inch buttered pan. Bake at 325 degrees F for 45 minutes or until at toothpick inserted in the middle comes out clean. Can also be made in 3 round cake pans. Bake the round pans for 20 minutes. Let cakes cool completely before frosting.

FROSTING:
20ounce can Crushed Pineapple, UNDRAINED
3ounce package French Vanilla or Vanilla Instant Pudding
16ounces Whipped Topping (Cool Whip)
Mix the crushed pineapple and pudding mix together well. Stir in cool whip. Spread on top of cake .
This make a lot of frosting to accommodate the 3layered cake. There will be extra with the pan cake so just have any extra fruit on hand and use it as a fruit dip. Enjoy with family or friends alike. It does need to be kept in the refrigerator which makes it a cool summertime dessert.
