Poor Man's Steak: I don't follow an exact recipe so I am guessing on some of these measurements. You can tweak the ingredient amounts accordingly, for your taste.
2 lbs ground beef
2 eggs
1 cup oatmeal
1/2 cup diced onion (optional)
salt and pepper
approximately 1/2 cup water
Mix together and form patties. Fry or grill and top with gravy. Bake for an hour at 350 degrees Fahrenheit.
Barbecue sauce for chicken:
1 cup water
1 cup apple cider vinegar
1 stick butter
1/4 cup salt
2 tablespoons Worcestershire sauce
Mix together in a saucepan and heat until butter is melted. Cool and pour into a spray bottle. Spray liberally as you are grilling the chicken.
Crunchy Ramen Salad:
1 large head Romaine lettuce
1 head brocolli
4 green onions, sliced
1 package Ramen noodles, crushed
1 cup walnuts or pecans, chopped
2 tablespoons butter
1/2 cup red peppers, diced
1 cup shredded cheddar cheese
cherry tomatoes
Toast the noodles and nuts in the butter. Toss all the ingredients together except for the toasted noodles/nuts.
Add the sauce and toasted noodles/nuts just before serving.
Sauce:
1/2 cup cane sugar
1/4 cup vinegar
1/2 cup olive oil
1 teaspoon soy sauce
1 teaspoon salt
seasonings from noodles
black pepper
Heat sugar and vinegar until sugar is dissolved. Cool and add the rest of the sauce ingredients.
Peach Marinade for Chicken:
1/2 cup peach preserves ( or another flavor)
1/4 cup oil
2 tablespoons barbecue sauce
1 tablespoon Dijon mustard
1 tablespoon white vinegar
1 garlic clove, crushed
1 jalapeno pepper, diced
1 teaspoon salt
1/4 teaspoon pepper
Ranch Potato Casserole:
68 medium potatoes
1/2 cup sour cream
1/2 cup ranch dressing
1/4 cup bacon, fried and crumbled
2 tablespoons parsley
1 cup shredded cheddar cheese
topping:
1/2 cup shredded cheddar cheese
1/4 cup butter
2 cups crushed cornflake crumbs
Cook potatoes until tender and set aside. Combine sour cream, ranch dressing, bacon, parsley, and 1 cup cheese. Place potatoes in a greased 9x13inch baking dish. Pour sour cream mixture over potatoes and toss gently. Top with cheese. Combine cornflake crumbs and melted butter and sprinkle over the casserole. Bake at 350 for 4050 minutes.
