Mediterranean Orzo Salad (serves 810 people as a side dish)
1 lb (16oz) orzo pasta
1 pint (10oz) grape tomatoes (275g), halved
1/2 cup kalamata olives (90g), pitted and halved
1 (4oz) container crumbled feta cheese
1/2 cup Italian flat leaf parsley (15g), chopped
3 tablespoons capers (22.5g), with juice
1/2 of a small red onion, diced (optional)
Dressing:
1/4 cup fresh lemon juice (57.5g)
1 clove garlic
1 tablespoon honey (21g)
1/4 teaspoon salt (1.5g)
1/8 teaspoon ground pepper (0.3g)
1/2 cup extra virgin olive oil (65g)
